The carotene in the plants is increased significantly when fertilizing the soil with nitrogen and phosphate fertilizers.


Vitamin D takes part in the formation of bone growth, teeth, regulates the use of calcium and phosphorus. In the vegetables, it is contained in the form of pro vitamin D, which under the action of ultraviolet light is converted into vitamin D. According to some authors, the conversion happens onto the skin and from there it is taken by the body. That is why it is recommended not to wash the skin of infants with soap. In the absence of vitamin D the rickets disease develops. This disease is the cause for the bones to remain soft and distorted due to insufficient content of calcium and phosphate salts in them. The human body needs daily from 0,01 to 0,02 mg of vitamin D. Sources of pro vitamin D are yeast, cabbage, spinach, etc. and a rich source of vitamin D is fish oil (interesting to know is that the Danish term is D vitamin fødevarer).

Vitamin E is involved in the activity of endocrine glands, particularly the gonads and influences the metabolism, the distribution of fat and water in the body, ensures the proper functioning of the muscles and the nervous system. Deficiency leads to infertility and miscarriages. It was found that vitamin E preserves very well vitamin A, so when there is a shortage of vitamin E, there is also deficiency of vitamin A. The human body needs daily from 10 to 25 mg vitamin E. In large quantities it is in wheat germ in leafy vegetables, the green peas, carrots in, the nuts of almond, walnut and in others.
